No-Chicken Salad Sandwich

This no-chicken salad sandwich made with chickpeas is a delicious plant-based alternative to the classic chicken salad. Mashing the chickpeas creates a creamy texture that blends seamlessly with Greek-style yogurt, celery, pecans and grapes for flavor and crunch. Serve it on whole-grain bread, in a wrap, over a salad or with crackers for an easy lunch.

Beet & White Bean Sandwiches

These beet and white bean sandwiches have a vibrant, creamy filling. Pickling the beets in rice vinegar and thyme leads to a tangy, herb-infused flavor. Making your own pickled beets also eliminates any added sugars that might be in a store-bought version. Combining the beets and beans with alfalfa sprouts, red onion and your favorite bread, these sandwiches are a satisfying plant-based lunch.

Cucumber-Avocado-Tomato Sandwich

This tomato, cucumber and avocado sandwich is the perfect light and easy lunch. With a few fresh ingredients, you can have a satisfying meal in just 10 minutes. Creamy avocado and hummus provide plant-based protein and healthy fats, while juicy tomatoes and crisp cucumbers bring refreshing crunch and flavor. Layer it all on whole-grain bread for an extra boost of fiber, and you’ve got a quick and wholesome sandwich at the ready!

Gut-Friendly Veggie Sandwich

This high-fiber sandwich features a tangy yogurt spread for a probiotic boost, plus shaved asparagus for a healthy dose of prebiotics to support a healthy gut. Shaved asparagus is a great way to enjoy raw asparagus. To shave the asparagus, use a vegetable peeler and peel the spears lengthwise.

The Creamiest Egg Salad Sandwich

Photographer: Hannah Hufham, Food Stylist: Amanda Stanfield, Prop Stylist: Tucker Vines

The egg salad in this sandwich gets its creamy texture from finely grating the eggs, which blends the whites and yolks together so you get a bit of both in each bite. A microplane grater is the best tool to use to get that perfect, uniform texture, but a fine-mesh sieve will work well too. We top the egg salad with a little bit of Parmesan cheese and toast the sandwiches in a skillet with a little butter to make this creamy sandwich extra special.

Veggie & Hummus Sandwich

This mile-high vegetable and hummus sandwich makes the perfect heart-healthy vegetarian lunch to go. Mix it up with different flavors of hummus and different types of vegetables, depending on your mood.

These broccoli-cheese melts combine crisp-tender broccoli with a layer of melted cheese inside two crispy pieces of bread for a sandwich that’s rich and creamy. These 20-minute cheese melts are the ultimate comfort food—satisfying and packed with that cheesy goodness everyone loves. We crisp up these sandwiches on the stovetop, but if you have a sandwich press, you can use that instead.

Pesto Breakfast Sandwich

This vibrant green veggie pesto sandwich is the perfect way to get your day started. This 10-minute breakfast features microgreens, which are young vegetable sprouts harvested just after the first true leaves develop. If you can’t find microgreens, alfalfa sprouts or chopped baby lettuce can be used in their place.

Cabbage Grilled Cheese

This warming cabbage grilled cheese has it all from melty cheese, tender cabbage and crispy sweet-tart apple slices. This sandwich is an easy winner for lunch or dinner served with a green salad. A light layer of mayonnaise on the outside of the bread is a great way to toast a grilled cheese to golden brown without having to rely on butter. We love tender, sweet Savoy cabbage, but this recipe would work with red or green cabbage as well.

High-Protein Tomato, Mozzarella & Arugula Sandwich

This vegetarian sandwich is packed with protein, thanks to creamy fresh mozzarella cheese and plenty of walnuts blended into the roasted red pepper spread. The spread, reminiscent of romesco sauce, is versatile and can also be served as a dip or sauce—adding depth and complexity to dishes like grilled meats, seafood and vegetables—or as a topping for pasta.

Spinach, Sun-Dried Tomato & Cucumber Sandwich

This protein-packed hummus sandwich features a topping of crisp veggies, feta cheese and sweet, tangy sun-dried tomatoes. Sun-dried tomatoes in oil have a soft texture that’s perfect for sandwiches. You can use dry-packed sun-dried tomatoes in their place, but you may have to rehydrate them in water to soften them first.

Sweet Potato Grilled Cheese

Photographer: Jen Causey, Food Stylist: Julian Hensarling, Prop Stylist: Josh Hoggle

The crispy golden exterior of this sweet potato grilled cheese is thanks to mayonnaise, which spreads easily and browns more evenly than butter or oil. Roasted red onions and sweet potato rounds make up the filling, but you can roast the onion separately and use leftover roasted sweet potato if you have that on hand.

This cauliflower spanakopita melt is a dream come true! It blends the flavors of the Greek spinach pie, spanakopita, into the hand-held comfort and convenience of a grilled cheese sandwich. Chopped roasted cauliflower brings a healthy, veggie-packed twist. We cook these sandwiches in a skillet, but if you have a sandwich press, you can use that to crisp them up instead.

Cucumber Sandwich

This creamy, crunchy cucumber sandwich recipe strikes a lovely balance between decadent and light. The cream cheese–yogurt spread complements the crisp refreshing cucumber, while the whole-wheat bread holds everything together with hearty flavor and texture.

Caprese Sandwich

This caprese sandwich is fresh from the basil and hearty from thick, crusty ciabatta. The sun-dried tomatoes deepen the flavor. Topping the bread with a layer of basil leaves and using toasted bread helps to keep the sandwich from getting soggy if you need to make it a few hours ahead.

Chickpea Salad Sandwich

This vegan chickpea salad sandwich is lemony, bright and surprisingly delicious. It’s got all the flavors of a classic tuna salad sandwich—dill, lemon and a bit of garlic—but with chickpeas instead to add a vegan source of protein and a healthy boost of fiber. Celery brings a nice crunch.

Crispy Smoked Tofu & Coleslaw Wraps

Johnny & Charlotte Autry

Tossing the smoked tofu in cornstarch then pan-frying makes it super-crispy. Drizzle with hot honey or your favorite hot sauce to spice it up a little.

Corned Beet Reuben Sandwich

Tossing beets with coriander, mustard seeds, cinnamon and allspice gives them savory corned-beef flavor. With this vegetarian Reuben sandwich, you won’t miss the meat.

Piled-High Vegetable Pitas

Fresh, bright flavors come alive in these easy vegetarian pitas. Allow enough time to make the roasted vegetables, or make them a day or two in advance for a healthy meal that takes less than 30 minutes to prepare. These pitas would also work well with whatever leftover cooked veggies you have on hand. No need to warm up the roasted veggies; this recipe tastes great chilled or at room temperature.

Rainbow Veggie Wraps

There’s definitely a sushi vibe to these kid-friendly wraps, which are stuffed with vegetables, cheese and hummus and then rolled and sliced. Serve them with store-bought green goddess, a creamy herb-filled dressing, to take it up a notch with ease. They look impressive but they’re easy enough for kids to assemble themselves for an easy lunch or dinner.

Vegetarian Antipasto Sliders

These vegetarian sliders are a delicious twist on the classic Italian app. Look for soft, pull-apart dinner rolls in the bakery section of your grocery store. If you can’t find them, swap in 6 whole-wheat burger buns and make larger sandwiches.
